CMC (also known as tylo) makes the drying process quicker for sugarpaste models, as well as giving them a firmer structure, making them less likely to damage. Perfect for when you’re in a rush and need to cut down drying times.

Pure CMC is great for bonding in ice cream, used as a primary ingredient in gels, adding to sugarpaste to create modelling paste and flower paste or as a stabiliser in buttercreams.

It can also be used to create edible glue when mixed with water.
