Meri White For Royal Icing And Meringues 500g

Meri White Royal Icing Recipe:

Sprinkle 75g (3oz) MERI-WHITE into a grease-free jug.

Add 500ml of cold water and whisk briskly until the powder is fully dissolved.

Pour some of the MERI-WHITE into a grease-free bowl attached to a mixing machine fitted with a beater.

Gradually add 3kg (7lb) of icing sugar (a.k.a confectioners / powdered sugar) and mix until the Royal Icing consistency you require is obtained.

Royal Icing for coating and piping can take up to 10 minutes to mix, depending on the consistency you require

Using Meri White as a Pure Albumen has a few advantages, the Royal icing has a whiter appearance, perfectly smooth and cheaper.

Can be used in many aspects of cake decorating: coating, piping, palette knife painting, letter piping, cookie decorating etc.
